2007.9.28 @ 19:20 A little sour, pretty bitter. Strong flavor, but not something that sticks in your mouth forever. I didn't really have to proper glassware (read: plastic cup), but I still found it enjoyable. Not something I'd want to drink a lot of all at once, but certainly a great beer for a treat. |

2007.10.2 @ 04:32 A little medicinal in flavour, which I love. A "chalky" aftertaste (which I also love). Absolutely perfect with fatty food (say a Four Cheeses Pizza). |

2008.2.2 @ 21:19 An update: I just had this out of the proper glassware at the Publick House in Brookline, MA, and it was very tasty. Sour, almost like a cranberry, with a touch of sweet to balance. |

2008.2.7 @ 03:56 Got my hands on the 2005 vintage. Too sickly sweet and yeasty for my tastes, but I'm still not sure whether or not the bottle had gone bad. Also agree with medicinal and chalky as noted above, but those aren't good attributes as far as I'm concerned. I'll give it a try again later. We'll see. last edited on 2008.2.8 @ 00:50 |

2008.3.22 @ 12:53 Pours a dark brown and completely opaque with one finger off-white head sitting on top. Aroma is beautiful. Dark ripe fruits, a little yeast, sweet malt, and a bit of alcohol. Taste is great. Dark fruits, malty sweetness, a little breadiness, and a slight alcohol warmth. Mouthfeel is medium bodied and appropriately carbonated. Drinkability is moderate because of higher alcohol, but great flavors make for easy consumption and a pleasureable experience. |

2008.9.12 @ 13:39 A love supreme that is as voluptuous as Maria Grazia Cucinotta| Those friars really know how to temp the devil elaborating beer and Cheese! This is a real case of slow liquid food, to be enjoyed sip by sip. Definitely, it is not a brew made for bland, unidimensional beer lovers. This notorious Trapist Ale is one of the few well deserved cases where the use of sugar in brewing is worthy. It is a red amber opaque color, high carbonation and big headed beer. Good malt nose, complex spicy and fruity esters Ale with no hot alcohol or solvently aromas, even tough It is 9% ABV. which will make it perfectly mature as any good wine. Its Trapist cousins are Westmalle, Orval, Rochefort, Westvleteren y Ache, and in Holland, La Trappe. A lovely belgian lace was painted on my brandy glass after I drunk it. |
