Ingredients

  • 10 lbs. Pale Malt
  • 4 oz. Chocolate Malt
  • 5 oz. Crystal Malt
  • 1 lb. Vienna Malt
  • 5 oz. Black Patent Malt
  • 1 oz. Fuggles hops
  • 1 oz. Kent Goldings hops
  • 1 lb. Honey (summer wild flower)
  • English Ale Yest (White Labs WLP002)

Method

  1. Crush all grains and add to mash tun
  2. Mash in with 13 gal. liquor at 160-165ºF
  3. Rest 1 hr.
  4. Sparge with 170ºF liquor, collect 6 gal.
  5. Bring wort to boil
  6. Add Fuggles, boil 30 min.
  7. Add half of the Goldings, boil 15 min.
  8. Add the honey, boil 15 min.
  9. Add the rest of the Goldings, boil 15min.
  10. Cool, add to carboy
  11. Pitch yeast when temp is below 80ºF
  12. Ferment 2 weeks, bottle, condition 2 weeks

Gravities

  • OG: 1.066
  • FG: 1.018
